Hey Will,
Thanks for the idea, but the our schedules on the weekend for the next 2 months are booked. We wouldn't be able to go during the week either any time soon because she needs to put in notice at least 2-3 weeks in advance... So in a way, the idea is pretty much shot... BUT - it will be kept in mind for another occasion.

What to get someone who has everything they need...
Personally.. when my birthday came around, my sister gave me a watch. A beautiful time peice.
BAM...

Its not what I was looking for.. but beautiful craftship.

I was looking for a watch with the LCD face, that combines a digital read-out along with a "digital" analog read-out. There are no hands, just one LCD screen. I believe that Casio makes this, but not 100%

Hey Cyberion,
She bought me a watch for my last birthday. You see where I am having the problem now... I have just about everything I know I want... Unless there is something cool that just came out that I am unaware of.

Hello roadworker,
That is a nifty little gift. I do have a laptop, but it is set up to stay at home since I use it as my web server for when I am developing code for client websites. And I have it set up to just "netmeeting" into the system, so there is no need for another mouse (since I have the Wireless Optical Desktop Elite from Microsoft).
Thanks for the idea though.

A pen {stylish one too}
Waterman, Mont Blanc, etc.
I think the ideal thing here is to stear away from geeky toys, cause the just break down.
A pen/watch.. a friend of mine told me about cash bonds to invest in the future...
A Tie, Book (non-ebook)
Though one geeky toy..
100mbit Internet connection (sustainable for life - you don't have to pay monthly charges... )

Hey Cyberion,
I received a beautiful Waterman Paris Pen/Pencil set with my name engraved on them for our 1 year anniversary.
Hey Fisher,
That would be nice, but I don't think that will happen any time soon. I'll stick to what I have - a 2001 BMW 325CI.
Thanks for the suggestions guys... My time is running out. So the last resort will be a couple of shirts - button down, or spring time shirts.
