Well it appears that the solution of adding the registry value wasn't the full fix for the issue I was having. The balloon stopped, but the printer icon remained in the system tray.
There was a setting I needed to change after upgrading to SP2... If you go to your Printer and Faxes configuration window (where you see a list of installed printers), then within that window go to FILE/SERVER PROPERTIES, then click on the Advanced tab, there is a setting there that needs to change. All you need to do is uncheck the "Show informational notifications for network printers".
Once this change is made, everything went back to normal. The printer icon appears when printing starts and then printer icon in the system tray will then go away.
I have my printer hooked up to my server so that my entire household could gain access to it. So after making that change, all was working fine. Funny how some of the other computers in my house that have SP2 still have this setting checked, and do not get the balloon... Odd, but it is now fixed.
