By re-reading your post after your PM, I can see that someone could give a 100% legal answer to your question.
You can try this:
You have the right in
your computer to set your BIOS clock forward to as much as you want, right?
Do that.
Install Office 2003 Beta 2
Restart and set your BIOS clock to back to current
Try evaluating your Beta.
I am not sure about any other legal way of extending the 180day period.
