I made a few guides a long time ago that worked quite well for me, I made one for a standalone PC and one for a PC on a home network with internet connection sharing.
Anyone one of the resoures above should be a help, the main thing is know what they mean and what you need and what the dependencies are bec. some cannot be disabled due to the fact that some key services rely on them. It's trial and error as well start adjusting them, clear your event logs and restart, recheck the events logs and work it all out by process of elimination.

yup, dave's right, one general rule of thumb i follow is that if it is a standalone pc most of the network services can be disabled, except for DHCP, DNS, Network Connections, and Routing and Remote Access, that frees up a lot of space alone, then Remote Registry and Portable Media Serial Number can generally always be disabled

edit: another thing you can do too is to set most of the services other than the ones that are critical to boot the OS to manual, reboot, use your computer for a little while, then check and see which services are started and which ones aren't, if they don't start after you do everything you normally do with your computer than odds are you won't need them and they can be disabled, or left at manual so that if something ever does need them they can be started, and the ones that do start you can set to automatic
